What tastes like lobster is a fish product called surimi. Look for cost-efficient refrigerated or frozen lobster-flavored surimi in the grocer's fish section.
1 12-ounce can evaporated skim milk (1-1/2 cups) In a saucepan combine milk, cornstarch, and ground red pepper. Stir in peas. Cook and stir over medium heat until bubbly. Cook and stir 1 minute more. Gradually stir half of milk mixture into the egg yolk; return egg mixture to pan. Cook and stir until bubbly. Reduce heat. Cook 2 minutes more. Add fish. Stir in Madeira, sherry, or milk and lemon juice; heat through. If necessary, thin with a little milk. Spoon over rolls (use 3 rolls, 3 servings-can be served as a whole or on individual plates). Sprinkle with snipped chives, if desired. Makes 3 servings.
