In a large saucepan, heat butter until foamy. Add lobster meat and cook until pink. Remove meat from pan and set aside.
1 onion, finely chopped
Add onions to remaining butter in pan and cook until transparent. Stir in water, 1 tsp. salt and potatoes. Bring to a boil, cover and simmer for about 5 minutes or until potatoes are tender. Stir in lobster, milk, 1/2 tsp. salt and pepper. Heat thoroughly, but do not boil. Pour into individual serving bowls.Courtesy of Lobster Direct
