Maine Lobster Newburg

  • 2 lbs. cooked Maine lobster meat (You will yield approximately 1/3 lb. of lobster meat per 1lb. lobster)
  • 3 Tablespoons butter
  • 1/3 cup flour
  • 1 cup milk
  • paprika
  • sherry

Cut lobster meat into bite size pieces and set aside.

Melt the butter in a pan over medium heat. Slowly add the flour and whisk together to make a smooth paste. Slowly add the milk a little at a time and stir constantly with the whisk until all is blended. Continue to stir over medium heat until the mixture has thickened. 

Put all of the lobster meat in the pan with the flour mixture and add about 2 teaspoons of paprika (add more if you want more color). Mix together and refrigerate overnight.

When you are ready to serve, heat the lobster mixture over medium heat - do not boil. The mixture will be very thick. Add sherry and/or additional milk as it is being heated to create the consistency of a heavy sauce.

Serve over toast points or puff pastry shells.
