Patty's Lobster Quiche

Pastry for two nine-inch pie crusts


  • 1 1/2 lbs. Maine lobster meat
  • 3 cups shredded Swiss cheese
  • 1/3 cup minced scallions
  • 6 eggs
  • 2 1/2 cups light cream
  • 1 teaspoon sugar
  • 1/2 teaspoon paprika

Place pastry in two pie plates or one 9x13 pan. Shape to pan. Line pastry with the lobster meat, shredded cheese and scallions. Mix together and beat well the eggs, cream, sugar and paprika. Pour the egg/cream mixture over the lobster/cheese/scallions.

Place in pre-heated 350 degree oven. Bake approximately 45 minutes (longer for the larger pan) or until the quiche is set (knife inserted in center comes out clean).

Cool for 5 minutes before serving
